Many soft and biological systems are made of a large number of interacting objects, whose size is just right for optical observations, and whose characteristic traits are emergent properties of the system. Optical microscopes, once mostly used as semi-qualitative probes of the phases, geometrical properties and state of motion of these systems are nowadays increasingly used as highly quantitative tools to probe their structure, dynamics, and mechanical state. In this talk, I will provide application examples of current interest for my group ranging from foams to cell tissues.
