 : Many soft and biological systems are made of a large number of interacti
 ng objects\, whose size is just right for optical observations\, and whose
  characteristic traits are emergent properties of the system. Optical micr
 oscopes\, once mostly used as semi-qualitative probes of the phases\, geom
 etrical properties and state of motion of these systems are nowadays incre
 asingly used as highly quantitative tools to probe their structure\, dynam
 ics\, and mechanical state. In this talk\, I will provide application exam
 ples of current interest for my group ranging from foams to cell tissues.
